Edmond Théry was a French economist and sparkling wine lover. He decided to spend the majority of his time in wine production (Late 1800’s). To ensure the highest quality possible, the cellar has been dug ten meters underground and it became the reference in the region. After the death of Edmond Théry in 1937, his sons and grandsons initiated a toll manufacturing sparkling wines production. During the 80’s the company started to experiment emerging technologies of sparkling wines such as the Charmat Method.
